Cassata Cake

This is one of our most beautiful, delicious, and popular cakes. We first soak our golden sponge sheet cake with our rum-syrup and then generously spread on it our ricotta-cream cannoli filling. We next roll the cannoli-filled cake, jellyroll-style, and cover it in a rich, poured chocolate fudge, ganache icing, and decorate it with chocolate buttercream icing. Serves 6.
