The Di Camillo Family has been baking our hand-rolled Scaletta bread since 1920 and it is the cornerstone of our bakery. “Scaletta” is Italian for “small-ladder” and the name refers to the back-and-forth curling of the dough that occurs when the loaf is formed. This hand-working of the dough helps develop the distinctive shape, resulting in its rich, expansive crust. It is the
hearth-baking, which means it is baked directly on the oven-deck without a pan, that helps create the thick, flavorful crust. Beneath the crust of these hand-formed loaves lies a soft, white, fiber- like interior texture with a eemarkably clean taste. We recommend it unsliced for better keeping
quality. There is no better toast anywhere!

It is from this same simple, sugar-free, shortening-free, preservative-free dough that we also fashion many of our breads, rolls and pizzas.

This larger version of our most famous bread gives a more generous sized slice and, some maintain, an even better eating experience! A family favorite. A little more difficult to cut but definitely worth the effort. Completely hearth-baked.

This is entirely different dough from our Scaletta bread and contains cracked-wheat flour, oats, sunflower seeds, millet, flax seed, sesame seeds, and yellow, de-germinated corn-meal. This is a wonderfully hearty bread, not heavy yet extremely satisfying and loaded with healthful nutrients. These round breads are covered in sesame seeds and have great keeping qualities and toast up to
perfection.

This light-as-a-feather bread is made from our classic Italian Scaletta dough. Round and high it has a lighter texture and airier crumb than the original. A perfect example of the variety in taste and texture that is created through different handling of the dough. A wonderful bread for stews, soups, and sauces. Great for bread soup! Pan-baked.

It is no accident that our baguettes are so authentic. Good French bread has as its base the same simple ingredients we use in our classic Scaletta formula: flour, water, yeasts, and salt. From the very same dough we make our Scaletta bread we get a very different result. The same clean taste but a light, airy interior and a crisp, thin crust. The addition of steam in the proofing process (when the loaves are placed in a steam-box) helps to create the lighter texture. Finally, pan baking provides the baguette’s thinner crust. Skill and technique is every bit as important as ingredients. Certainly this is one of the great breads in the canon of baking. Its uses are endless but caution: you may find one baguette lasts for only a single serving, so get two!

For our family, pizza is only as good as the bread it is made from and this pizza best exemplifies the thin divide between the two. Starting with our Scaletta bread-dough this pizza is proofed in our seasoned pans then liberally sprinkled with oil, herbs, spices, and salt and pepper. Made without cheese or sauce. Its simplicity is what makes it so good. A great addition to any bread basket and a special compliment with salads. We feel this pizza is actually at its best at room
temperature but certainly can be heated.

Again we are using our magic Scaletta dough. This bread is similar in shape to a baguette but slightly wider but has some noteworthy additions: namely an egg-wash and topped with either sesame seeds, poppy seeds or just the simple egg wash which provides the shiny glimmer of the crust. The egg-wash gives not only a golden glow but a somewhat softer, flakier crust. The seeds
add a subtle, nutty taste. This is a perfect submarine sandwich loaf and it toasts just right. Pan baked.
